I am very good at organising things, I am always prepared for everything but I still struggle to plan ahead when it comes to grocery shopping – one flaw of mine that I definitely want to improve on! My husband does the shopping these days so I do feel his pain when I just wing a shopping list within 2 minutes and both of us know, I have no clue what actually I will be cooking from the list…
Therefore I happen to find myself gazing in the fridge some days, when I am just looking at what we have in the fridge and just come up with something based on those ingredients. Secretly, I like this freedom it gives me, to just simply mix certain ingredients, try new flavours when mixing different things and luckily, the majority of them actually taste really good. My husband has been begging me to actually write these recipes down so every now and then he can also prepare a meal if he wants to. I think this blog serves that purpose as well, so here it goes, another one of my – “let’s just prepare something from leftover ingredients” meal!
We usually have chicken in the freezer, it can always save us. We buy it in our local market and since we discovered the supplier (a grass-fed organic farm) we are reluctant to buy chicken from any other place. The texture of the meat is always very soft and the taste of it is just pure lush.
So I had my base, which I knew is going to be chicken. We also always have a coupe of boxes of coconut milk at home – the best brand I have found is the Aroy-D coconut milk, the only one that has noting else in it but coconut cream – 60% – and water. We also had dried tomatoes and sweet potatoes from the market. These all been chopped too and have been added to the meal. As you know, I always have homemade pesto in the freezer and tomato sauce. As simple as this! The end result was a comfort food like pure delicious mouth-watering Italian chicken meal, which now we prepare quite often.
The meal can be eaten on its own or with rice or pasta (gluten-free, from real ingredients only) and salad.
- 500g chicken
- 2 shallot onions
- 1 garlic
- 400g tomato
- 8-12 dried tomatoes
- 300g sweet potato
- a pinch of oregano
- half a bunch of fresh basil
- a pinch of mixed herbs (optional)
- sweet paprika powder (optional)
- 2.5dl coconut milk
- Parmesan cheese
- Slice the onions, garlic and tomatoes and cook on low temperature until onions look cooked.
- Add in fresh basil, oregano and mixed herbs.
- Mix in food processor to get a tomato sauce.
- Meanwhile dice up the chicken and start cooking with coconut oil, salt and paprika.
- Add in the tomato sauce and coconut milk and Parmesan cheese.
- Cook on low temperature for 1-2 hours.
The meal is great to freeze too so if you do a bigger portion, you can freeze some for later.
